






Here is a super quick an easy recipe for something I call "Lemon Pie" which isn't techincally a pie, being that it isn't baked, but the outcome is similar.
You'll need:
- 1 can condensed milk
- 1 can evaporated milk
- 150 ml of lemon juice
- 2 packs of Graham crackers or Maria crackers
In a blender, mix the condensed milk, the evaporated milk and the lemon juice. Set aside. In a big Pyrex dish, put one layer of crackers and cover it with a little mix, then put another layer of crackers and add a little more mix, and so on until you do it 3 or 4 times.
As you can see in the picture, I made a little mistake because I layered all the crackers first and the poured the mix all over it. You can do this, but you need to have some mix in between layers to "glue" it all together. What I did is, I had to spread a little bit of mix in between crackers, but this is not the best way to do it, as I said it was a mistake. It came out great anyway.
Spread the mix on top evenly so it looks nicely distributed.
Put it in the fridge for about 1 hour. This will give more consistency to the mix and make it more like a pie filling, rather than liquid.
You can add some ice cream or whipped cream.
